Phillips Family Farm's Brunch Blintz

Blintz Base

8 tablespoons butter (softened)

1/3 cup sugar

1 1/2 cups sour cream

1/2 cup orange juice

1 cup flour

2 teaspoons baking powder

Blintz Filling

8 oz cream cheese (softened and cut into cubes)

2 cups small curd cottage cheese

2 egg yolks

1 tablespoon sugar

1 teaspoon vanilla

Preparation

1Preheat oven to 350°

2Butter a 9" x 13" baking dish

3Put all of the Blintz Base ingredients in a blender and blend until smooth.

4Pour into 9" x 13" baking dish

5Put all of the Blintz Filling ingredients in the blender and blend until smooth.

6Drop Blitz Filling by large spoonfuls into the base mixture.

7Use a butter knife to gently swirl the filling into the base.

8Bake uncovered at 350° for 50-60 minutes.

Additional Notes

Allow to cool at room temperature, then refrigerate until cool. This is best served cool/room temperature.

Remove it from the refrigerator about 30 minutes prior to serving to allow it to come to room temperature.

Top it with fresh berries of your choice and whipped cream. Serve with a side of Phillips Family Farm's Pastured Bacon. ENJOY!
