Pesto Without Nuts

Pesto doesn't have to have expensive pine nuts to be delicious. Fresh Basil, garlic and good Parmesan with nice extra virgin olive oil give it wonderful flavor.

Main Ingredients

2 c. fresh basil

3 - 4 cloves of fresh garlic

3/4 c. fresh shaved or grated parmesan cheese

1/2 juice of lemon

1/3 c. extra virgin olive oil

1/4 tsp. salt


1Put all of the ingredients into a food processor and blend into a paste.

2Adjust the seasonings to your taste.

3The mixture will seem juicy, but will firm up when refrigerated.

4Pour into a pint jar and seal with a lid. Keep in the refrigerator for a week to a week and a half.

Additional Notes

Delicious on crackers, baguettes, pizza and many other recipes.
