Pesto Polenta Lasagna

Main Ingredients

1 18oz Package polenta

1 12 Oz Jar marinara sauce

1/4 cup pesto

1 cup spinach

1/4 cup pine nuts

1 cup shredded mozzarella cheese

1 tablespoon olive oil


1Preheat oven to 375 degrees F. Oil an 11x7 inch baking dish.

2In the baking dish, add a single layer of polenta.

3Spread a thin layer of pesto over the polenta and then spoon half of the sauce over the polenta and pesto.

4Add the cup of spinach as layer and add a layer of polenta and sauce, which is the last layer.

5Bake, uncovered, for 25 minutes.

6Turn the oven’s broiler on. Add cheese and pine nuts to the top of the lasagna and broil until cheese browns and nuts are toasted. About 8 minutes.
