Main Ingredients

organic whole chicken with or without the giblets

fresh lemons and mandarins

kerrygold butter

bunch of fresh herbs-thyme, sage, rosemary


rainbow carrots

organic chicken stock

sea salt and pepper

everyday seasoning from trader joe's


1Preheat the oven to 350 degrees

2Rinse and pat dry your whole chick and place in roasting pan

3Juice the entire bird with mandarin orange and lemon juice

4Take a slice of butter and butter the entire bird

5Salt and pepper your bird

6Next, add everyday seasoning

7Add 1 box of organic chicken stock to the bottom of roasting pan

8Stuff your bird with sliced, trimmed, rainbow carrots, 1 garlic clove, and bunch of herbs

9Add sliced mandarins and lemons to inside of the bird

10Place a few carrots, mandarin orange and lemon slices to the bottom of pan

11Make a batch of chicken stock, melted butter, and additional sprigs of herbs in a saucepan and keep warm to baste chicken throughout the cooking process.

12Cook the chicken at 350 degrees for 3-hours or until the chicken juices run clear.

13Let stand outside of oven for 10-minutes before slicing up the chicken.
