Main Ingredients

2 eggs at room temperature

2 cups of milk

2 tablespoons of melted butter

2 cups plain flour, sifted

2 tablespoons sugar

1 tablespoon baking powder

a pinch of salt

1Whisk the eggs in a bowl until fluffy.

2Add the milk and melted butter.

3Add the flour, sugar, baking powder and salt then mix well until all the ingredients are incorporated.

4For fluffier pancakes, let the batter sit for 10 minutes before you start cooking.

5Heat a fry pan on medium heat and grease it with a little butter. (approx. 2 tbsp)

6Pour a small amount of batter into the pan and tip the pan around to spread out the pancake.

7When bubbles start to appear on the surface and begin to break, turn over and cook the other side, around 2-3 minutes on each side on medium heat.

8Pancakes can be served dusted with icing sugar, with fresh berries, maple syrup, whipped cream, Nutella, jam, or savoury with fried bacon on the side. Yum!

Additional Notes

If you prefer lighter pancakes, add a little more milk to the recipe. This is a basic recipe - to change/enhance the taste, you can add chocolate chips, cinnamon, freeze dried berries, coconut flakes, lemon oil, vanilla essence, or what ever takes your fancy!
