Perfect Instant Pot Peach Compote
Summer has arrived when the peaches show up at all the road-side stands! Peach sauce over your yogurt, ice cream, pancakes, etc is delightful, especially with the hint of cinnamon! This recipe is simple, has only a few ingredients and no corn syrup! It's fast and easy to make, and you control the quality of the ingredients! This recipe makes about 6 cups.

8 large peaches, ripe and chopped (organic-i leave the skin on)
3 tbs turbinado sugar*
1 - 2 tbs brown sugar
2 tsp pure vanilla extract (organic and non-alcohol are best if you can find them)
2 drops dōterra cinnamon essential oil
1Add peaches, sugars, vanilla extract to Instant Pot.
2Lock on Lid and close Pressure Valve.
3Cook at High Pressure for 1 minute (it takes about 5-10 minutes to come to full pressure).
4When Beep sounds, allow a 10 minute Natural Pressure Release.
5Stir in cinnamon oil.
*You can use 2 pounds of organic, frozen (no sugar added) strawberries, thawed first **I prefer turbinado sugar because it is created in such a natural manner, with almost no processing, that it is often referred to as “sugar in the raw” or “raw sugar.” NOTE: This compote may seem really runny - don't drain off the liquid as it will thicken in the refrigerator.
