Main Ingredients

1 , fifteen-oz can black beans, drained and rinsed

1/4 cup unsweetened, vanilla cashew or almond milk

1/2 tbsp instant espresso powder

2 large eggs

1/2 cup (heaping half cup) coconut sugar (you can also use cane sugar)

1/3 cup unsweetened cocoa powder

3 tbsp arrowroot starch/flour

3 tbsp coconut oil, melted (you can also use vegetable or canola oil)

1/2 tbsp vanilla extract

1/2 tsp baking powder

1/4 tsp mint extract

1/4 tsp salt

1/3 cup mini chocolate chips (i use enjoy life)

optional garnish:

crushed up peppermint candies

1Preheat oven to 350 F.

2Add black beans to bowl of a food processor; process until hummus-like consistency.

3Heat milk in microwave for 30 seconds. Immediately stir in espresso powder. Add to bowl of food processor, along with remaining ingredients except for chocolate chips, and process until smooth. Fold in chocolate chips by hand.

4Pour batter into lightly-greased 8" x 8" square baking pan. Bake for 30 to 35 minutes, until a toothpick inserted into center comes out clean. Let cool slightly before cutting into 16 small squares, then devour!
