Peppered Pumpkin Soup

This recipe is basic and quick! If you want to spice things up, try adding sautéed portobello mushrooms, or turn it into a curry with a sweet potato and spices. You won’t be disappointed.

Main Ingredients

some fresh pumpkin (depending on pan size)

2 cloves of garlic

water to fill pot half way

pink salt



1Evenly dice your pumpkin. Fill whatever size pan you wish. Add the garlic, whole if you like. Fill your pot with water covering half the pumpkin, then sprinkle with salt and pepper to taste. Boil away on high until soft, then use an immersion blender to make it smooth. If you like, dollop with sour cream or a vegan replacement, like soy yogurt. Eat with day old bread or croutons.
