Peanut Snack Mix

A sweet and salty mix for an afternoon or evening snack. This stays fresh in an airtight container, if you can keep from nibbling on it! You can also add different nuts or dried fruit to the mixture.

Main Ingredients

6 cups cereal squares (rice, corn, oat, wheat)

1/2 cup peanut butter

2 tbsp honey, or maple syrup

1 cup roasted peanuts

Preparation

1Preheat oven to 250 degrees Fahrenheit. Line a large cookie sheet or baking pan with foil and spray with cooking spray.

2Place the cereal in a large bowl. In a small, microwave safe bowl combine the peanut butter and honey. Microwave on high about 20-30 seconds or until smooth. Pour over the cereal squares and toss to combine. Mix in the peanuts.

3Spread onto baking pan and bake for 1 hour or until crispy (will crisp up more as it cools), stirring every 15 minutes. Cool completely and store in an airtight container.
