Peanut Butter & Jelly Bread
A healthy vegan version of the classic sandwich made into one simple bread loaf.

2 cups whole wheat pastry or spelt flour
1 tablespoon baking powder
3/4 teaspoon salt
3/4 teaspoon cinnamon
2 teaspoons vanilla bean powder (if using liquid extract mix the same amount into liquids)
1/2 - 2/3 cup coconut sugar
1/3 cup dried blueberries, optional
2 tablespoons coconut yogurt, or sub applesauce or mashed banana
1/2 cup peanut butter
1/4 cup maple syrup
1 1/2 cups plant milk such as cashew or almond
1 teaspoon vegan imitation butter extract, optional
1Preheat oven to 375 degrees fahrenheit.
2In a large bowl mix together all of the dry ingredients, then in a medium bowl mix together all of the wet ingredients. Pour the wet ingredients into the dry and mix slowly just until fully combined, be careful not to overmix.
3Pour into a non stick loaf pan and bake for 40 minutes or until a toothpick stuck in the center comes out clean. Allow to cool before slicing. Top with additional peanut butter and jelly for serving if desired or enjoy plain.
