Main Ingredients

1 1/2 cups organic whole wheat flour

1/2 cup unbleached all - purpose flour

1 1/2 tsp baking soda

1/4 tsp salt

2 flax eggs ( two tbsp ground flax seeds + six tbsp water, set aside to soak)

3 Ripe bananas, mashed

1/3 cup peanut butter

1/2 cup maple syrup

1/4 cup coconut oil, melted

1/2 cup vegan chocolate chips


1Preheat oven to 350F. Prepare a bread loaf pan by greasing with nonstick spray.

2Prepare the flax eggs by combining the ground flax seeds and water. Set aside to form a gel, about 5 minutes.

3In a large bowl, whisk together the dry ingredients (flours, baking soda, and salt).

4In a smaller bowl, mash the bananas with a potato masher or large spoon. Add the peanut butter and whisk until a creamy consistency is formed. Add the flax eggs, maple syrup, and melted coconut oil. Whisk again until combined.

5Add the liquid ingredients to the dry ingredients and whisk to combine. Stir in the chocolate chips and then pour the contents of the bowl into the prepared baking pan.

6Place in the oven and bake for 50 minutes. Use a toothpick to check if it is done. Depending on the length of your bread pan, you may need to bake it for an additional 5-10 minutes.
