Main Ingredients

1 lb dates

1 cup honey roasted peanuts

1/2 teaspoon salt

1 teaspoon vanilla

1/2 cup mini chocolate chips

Preparation

1In a food processor, combine all ingredients except for chocolate chips. Pulse until a ball forms (it might be sticky!). Add in chocolate chips and mix by hand or pulse a few times if your processor with let you.

2Scrape mixture from food processor and spread into 8x8" square pan. Flatten into pan (I've found the easiest way to do this is to spray hands with non-stick cooking spray and press into pan by hand). Refrigerate for a few hours until firm and cut into bars.
