Peach Pie Donuts
Peachy keen doesn't even begin to describe how these donuts will make you feel, they are guaranteed to make any frown turn upside down! These decadent treats are like fluffy clouds filled with delicious homemade peach pie filling and finished with a vanilla glaze. It's a recipe you'll want to make over and over again!

Peach Pie Filling
4 large peaches, peeled, pitted, and diced
1/3 cup sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1/8 teaspoon ground cinnamon
pinch of nutmeg
pinch of salt
2 1/2 teaspoons instant dry yeast
1/2 cup warm water (about 100 degrees)
1/4 cup white sugar
1/4 cup milk
1/2 teaspoon salt
1/4 cup vegetable shortening
2 large eggs
1/2 teaspoon vanilla extract
2 1/2 to 3 cups all-purpose flour
2 tablespoons butter (melted)
1 1/3 cups powdered sugar
1 pinch of salt
2 teaspoons milk
1/2 teaspoon vanilla extract
2 to 4 teaspoons water
1To make the Peach Pie Filling you will start by tossing the peaches in a medium-sized saucepan with the Sugar, Cornstarch, Lemon Juice, Cinnamon, Nutmeg, and salt. Let the mixture sit for 1 hour.
2After 1 hour, heat the mixture over medium-high heat until thickened.
3Transfer to a blender and blend until mostly smooth. Some small chunks remaining are okay as long as they can fit through the large tip of a piping bag. (Set aside until you are ready to use)
4To make the Donuts you will start by combining the Yeast, Water, Sugar, Milk, salt, Shortening, Eggs, and Vanilla in the bowl of a stand mixer. Pour in 2 cups of the Flour and knead on medium-low speed with a dough hook until well combined. Slowly add in the remaining flour until a nice dough ball forms. The dough should be wet, but it should not stick to your fingers or the bowl.
5Spray a large mixing bowl or proofing basket with nonstick cooking spray. Transfer the dough to the bowl or basket, cover with a clean tea towel, and let rise for 1 1/2 hour.
6Roll out the dough onto a lightly floured surface (about 1/2 inch in thickness). Use a drinking glass or circular cookie cutter to punch out 12 circles. Let the donuts rise for another 30 minutes once they've been cut out.
7Meanwhile, while the donuts proof you can begin making your Vanilla Glaze. In a medium-size mixing bowl whisk together the Melted Butter, Powdered Sugar, Salt, Milk, and Vanilla Extract. Add in water teaspoon of water at a time until it is just thin enough to dip your donuts into.
8Then you will need to begin heating your vegetable shortening in a large saucepan to fry your donuts. The shortening should be heated to about 350 degrees before you put the donuts in two until they are golden brown on both sides.
9Once the donuts are fried transfer them to a wire rack to cool and blot with a paper towel to removed excess shortening. Then each donut can be dipped into the Vanilla Glaze and then put back on the rack for a few minutes prior to filling.
10Then, fill a piping back with your Peach Pie Filling. Insert the tip of the piping bag into the top of the donuts one at a time, squeezing to fill with 1-2 tablespoons of filling per donut.
