Pea, Quinoa & Halloumi Fritters

2 cups cooked peas
2 cups cooked white quinoa
2 tablespoons of rice flour
2 tablespoons vegetable oil
sea salt and cracked pepper
1I find it helpful to have already cooked my quinoa earlier in the day so that it is much quicker at dinner time to make the fritters. To get 2 cups of cooked quinoa, you will need 3/4 of a cup of raw quinoa.
2Cook your peas either in the microwave or on the stove. The original recipe only used 1 cup of peas in the fritters, and only mashed peas, but I tend to use 2 cups and some mashed and some still whole. Its up to you!
3Combine cooked quinoa, mashed peas, flour, egg white, vegetable oil and season to taste.
4Cook in a little oil in a pan for 3-4 minutes either side, or bake in the oven for 20 minutes if you'd rather not cook with oil.
