Main Ingredients

1/4 lb past

2 eggs 1 cup shredded cheese

2 tbsp mince garlic

4 - 6 slices bacon

4 tbsp white wine, chicken stock, or pasta cooking water

salt

pepper

Preparation

1Boil water with a lot of salt and cook pasta according to box directions or to al dente.

2mix eggs with shredded cheese in a bowl. You can use almost whatever cheese you have on hand, but stick with traditional Italian hard cheeses like Parmesan, pecorino romano, asaigo, ect.

3render diced bacon on medium to high heat. When the bacon is almost done, add the garlic and turn the heat down to medium/low so not to burn the garlic.

4degalze the pan with some white wine or chicken stock to create a sauce. Toss the pasta with the bacon/garlic sauce to coat the pasta.

5turn the pan off and add the egg/cheese mixture and toss quickly so the eggs do not scramble. Add some extra cooking water as needed to thin out the sauce.

6add salt and pepper to taste.
