Pan Seared Tuscan Cod

2 - 6 ounce cod filets
1 pint multi colored cherry tomatoes, halved
2 cloves garlic, minced
1 tbsp basil, chiffonade
2 tbsp capers
1 tbsp butter
salt and pepper to taste
1Heat small amount of olive oil in saute pan on medium heat, add in garlic, tomatoes, sprinkle of salt and pepper.
2Add in seasoned cod filets, skin side up. Heat for 3-5 minutes, flip and continue to cook for an additions 3-5 minutes. Once fish is done, take out but leave tomatoes in pan to finish the sauce.
3Add in basil, and cappers. Swirl in butter and pour over fish.
4Sever immediately and enjoy.
This dish would be really good served with, mashed potatoes, rice, pasta, or wilted spinach.
