Palta (chilean Avocado Spread)

The avocado is a staple in Chile.  Each afternoon we took a break for onces, like British tea, and savored Palta; simple mashed avocado.  I still relish the fresh palta spread on warm, just baked bread that was delivered to the door by the local baker only moments before.  The Chileans use palta in many ways; serve with eggs at breakfast, as a sandwich spread, or stirred into pasta.

Main Ingredients

1 large hass avocado (dark green and slightly soft to the touch)

1 tsp of fruity olive oil; one made from arbequina olives is great.

pinch of good sea salt (we like fleur de sel for this one)


1Cut the avocado in half. 

2Use a large knife to spear the pit, remove and discard. 

3Use a large spoon to scoop out the avocado; place in bowl. 

4Drizzle in olive oil and salt and mash with a fork until creamy.  I like it slightly chunky. 

5Spread on warm bread lightly toasted and pour yourself a cup of tea.  Delicioso!
