Paleo Zucchini Bread Pancakes

1 cup zucchini, shredded
1 egg, cracked
1 scoop vanilla protein powder
1/2 t. cinnamon
1Grate zucchini into mixing bowl with box grater.
2Crack the egg into the mixing bowl.
3Add remaining ingredients and stir to combine. Batter should not be too thick.
4Heat nonstick skillet on low and spray with coconut oil.
5Spoon batter into pan, making three small cakes.
6Watch for the edges to firm (3-5 minutes) and then flip, continuing to cook for another 3-5 minutes.
7Serve with whatever floats your boat- berries, bananas, chocolate chips, almond butter, coconut whipped cream, coconut flakes, I could go on but I'll stop now.
