Typically, dairy-free yogurts cost nearly $2.00 a cup and are loaded with weird additives. For your very own cost-effective, clean Paleo yogurt, you just need four ingredients, a hand-mixer, and about three minutes. This faux-gurt does not have a strong coconut flavor and could be easily flavored to your imagination’s delight!

2 cans of coconut cream*
3 t. honey
1 t. vanilla
zest of one lemon
1Scoop out solidified coconut cream into a mixing bowl, leaving the liquid in the cans. Add honey, vanilla, and lemon zest.
2Mix together with hand-mixer until fluffy and combined (it should take about 10 seconds). I've found it will get funky if you over-process it in a high-powdered blender.
3Store in air-tight container in refrigerator for up to two weeks.
4You could easily customize this base recipe to however most pleases you: maple spice, lemon berry, chocolate almond butter...I could go on forever!
*If you cannot find coconut cream (which is the same price as coconut milk at Trader Joe's), just buy canned coconut milk, stick it in your refrigerator overnight, and it will automatically separate into coconut cream.
