Paleo Thai Meatballs
Thai takeout just got a paleo makeover with this recipe! These meatballs are bursting with ginger, lime, sesame, and cilantro. Serve with creamy zucchini noodles.

2 pounds of ground beef
4 t minced garlic gloves
2 t soy sauce or coconut aminos
1/2 minced yellow onion
2 t ginger, minced
2 t toasted sesame oil
1 t rice vinegar
1/2 t coriander
1/2 t lime zest
1/2 t red flakes
1 juice of lime
salt and pepper
1Preheat oven to 400.
2Using your hands, combine all ingredients in large mixing bowl.
3Roll meatballs into 1-inch rounds and arrange on baking sheet.
4Bake for 20-25 minutes.
5Serve with Creamy Avocado Noodles.
You could easily substitute ground chicken, turkey, pork, or a combination of these. These would be tasty over spaghetti squash, cauliflower rice, or stir-fried cabbage.
