Paleo Peppermint Mocha Mousse
Fluffy, decadent, and all the flavors of that beloved wintery beverage, this paleo and vegan treat is a healthier way to indulgent in a peppermint mocha. Thanks to a coconut milk ganache and avocados, this mousse is loaded with healthy fat while keeping added sugars and other junk out. Top with coconut whipped cream, berries, and chocolate shavings for a festive dessert or decadent breakfast!

4 ounces dark chocolate bar
1/4 cup canned, full-fat coconut milk
5 medium avocados
1/4 teaspoon peppermint extract
1/2 teaspoon vanilla extract
1/4 cup strong coffee or espresso
2 - 4 tablespoons honey or sweetener of choice
dash of salt
optional garnishes: crushed candy canes, berries, fresh mint, coconut whipped cream, chocolate shavings
1Microwave dark chocolate and coconut milk for 30 seconds, stir, and repeat until the mixture is melted and combined.
2Pour chocolate ganache, avocado flesh, extracts, coffee, honey, and salt into the food processor or blender. Pulse until smooth. Taste and add more sweetener as pleases your palette.
3Serve immediately or store in an airtight container in the fridge for 3-5 days.
