Paleo Cinnamon Sugar Coated Pumpkin Muffins

Preheat oven to 350 degrees and line muffin tin. It will make 12-14 large muffins and 24 mini muffins In a large bowl mix together all dry ingredients In a separate bowl mix together all wet ingredients Slowly add dry ingredients to wet ingredients until incorporated well. Main Ingredients

1/2 cup pumpkin puree

4 eggs

1/4 cup maple syrup

3/4 cup almond flour

1/2 cup coconut flour

1 1/4 tsp baking soda

2 tbsp brown sugar or coconut sugar

3 1/2 tsp pumpkin pie spice *can also add nutmeg to batter

pinch of salt

1 tbsp vanilla

7 tbsp coconut oil or butter (melted)

for cinnamon sugar

1/3 cup coconut sugar or white sugar

1 1/2 tsp ground cinnamon

Preparation

1Preheat oven to 350 degrees and line muffin tin. It will make 12-14 large muffins and 24 mini muffins

2In a large bowl mix together all dry ingredients

3In a separate bowl mix together all wet ingredients

4Slowly add dry ingredients to wet ingredients until incorporated well.

5Put batter into muffin pans and cook for 11-13 minutes for mini muffins or 13-16 minutes for normal sized.

6Let cool completely on wire rack before coating them in cinnamon sugar.

7*Coat with cinnamon sugar before serving, don't let sit more that 8 hrs or so. Coating changes consistency on the muffins.
