Paleo Chocolate Chip Zucchini Bread

Dense zucchini breads is transformed into a fluffy, nutrient-loaded breakfast treat. Studded with dark chocolate-chips, this quick bread makes for a perfect guiltless snack or dessert, too.

Main Ingredients

1/2 cup coconut flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

4 large eggs

1/3 cup honey

3 tablespoons melted coconut oil

1 teaspoon vanilla extract

1 cup shredded zucchini, about one medium zucchini should do

1/4 - 1/2 cup dark chocolate chips (i like enjoy life brand)


1Preheat oven to 350 degrees.

2In a medium mixing bowl, combine dry ingredients (coconut flour through salt). Mix with fork until well-combined.

3In a separate medium mixing bowl, whisk eggs. Add in honey, melted coconut oil, and vanilla, whisking until well-combined. Finally, fold in shredded zucchini and chocolate chips.

4Prepare loaf pan (I used 8.5X4.5) by spraying with coconut oil spray or other nonstick spray.

5Pour batter into loaf pan, distributing into even layer.

6Bake for 35 minutes, or until knife comes out clean and edges are golden brown.

7Cool in pan for 20 minutes before serving.

8Enjoy with a dollop of grass-fed butter, almond butter, or cream cheese if you tolerate dairy.

Additional Notes

Chocolate chips could easily be swapped for pecans, walnuts, dried cranberries, or shredded coconut. You could also use a combination of all of these goodies for a loaded zucchini bread.
