Paleo Chili Con Queso Dip

Creamy, melty, rich queso dip is studded with savory ground beef in this ground-pleasing appetizer. No one has to no that there isn't any queso to be found in this dip!

Main Ingredients

11/2 cups cashews, soaked in water for at least an 1 hour and drained

1 orange bell pepper, roughly chopped

1 cup unsweetened dairy-free plain milk like almond or coconut

2 teaspoons chili powder

1/4 cup nutritional yeast

1/4 cup minced onion

2 tablespoons taco seasoning (or diy blend of 2 teaspoons chili powder, 1 teaspoon garlic powder, 1 1/2 teaspoons cumin, 1/4 teaspoon oregano,

1/2 - 1 pound ground beef

1/2 cup salsa

salt and hot sauce to your liking


1Place the cashews in a small bowl and cover with water. Allow to soak for at least one hour or overnight.

2In the food processor, combine soaked cashews, bell pepper, almond milk, chili powder, and nutritional yeast until creamy and smooth.

3In a medium skillet, brown ground beef. As it browns and releases its juices, sauté diced onion along with the meat. Once onions and meat are cooked, pour in queso mixture. Add salsa and taco seasoning. Stir to combine. Feel free to add additional hot sauce and salt before serving.

4Serve with corn chips, bell pepper slices, and celery sticks.

Additional Notes

This would be delicious on top of baked potatoes, oven-baked fries, or even a burger!
