1 loaf simple mills artisan bread (cooked from mix according to package directions), sliced into one-inch thick slices

1 ripe banana, mashed

2/3 cup unsweetened vanilla almond or cashew milk

2 eggs

1 tbsp maple syrup

1/2 tsp rum extract

1/2 tsp cinnamon

toppings:

maple syrup

sliced banana

chopped pecans

Preparation

1Combine all ingredients (except toppings) in a blender; pulse a few times until mixture is smooth. Pour mixture into a large bowl.

2Let batter rest while preheating skillet or griddle to medium heat. Once hot, lightly grease with cooking spray or coconut oil (I use olive oil cooking spray and it works fine).

3Dredge a few slices of bread in the banana batter, making sure they are full submerged. Let sit for 2 minutes, then transfer immediately to skillet or griddle. Cook until golden brown, about 3 to 5 minutes each side. Repeat with remaining slices.

4Serve immediately with toppings, and devour!
