In a large pot, add oxtails, white and green onions, rosemary, garlic, thyme, cayenne pepper, paprika, crushed bay leaf, hot sauce, 2 beef bullion cubes and kitchen bouquet and marinate at least 4 hours or overnight in the refrigerator. i did mine overnight, so it was in there about 8 hours, actually more like 12 because i did not cook it till the following night.
Add enough beef stock to just cover the oxtails and bring the mixture to a boil. Lower to a simmer, cover and cook 4 hours on very low heat, just leave it there and go do other things, i cooked a pan of beef stroganoff for my weekly lunch that i'll be sharing with you guys next week
Open the can of beans, and rinse under running water like you should every single canned product.
After four hours, add in the beans, tomato paste, ketchup, remaining two bullion cubes, leave uncovered for 30 minutes.
For the last 30 minutes, increase heat to high, to reduce the liquid and give you a thicker consistency, at this point, the meat is falling apart, go ahead and taste one, i couldnt resist. Adjsust the salt, till this point we havent added any salt to it, so taste and season accordingly. Careful when stirring the pot to not break the meat into bits they are extremely delicate
