3 pounds of oxtail or beef tails, cut into small chunks, i got this done at the butcher
one can of lima beans ( optional, i didnt add this because of my low carb diet but you should! trust me)
1 large yellow onion, chopped
1 1/2 tablespoon of chopped garlic
3 tablespoon of gravy master or kitchen bouquet browning /seasoning sauce, i used kitchen bouquet cause thats what i found, gravy master is p
one packet of low sodium beef broth ( or use homemade)
2 tablespoon of hot sauce, i used sriracha
5 tablespoon of ketchup, i always use the all natural ones without hfcs
3 teaspoon tomato paste
2 tbsp of fresh rosemary chopped up
1 tbsp of dried thyme
2 tbsp of cayenne pepper flakes
3 teaspoon of smoked paprika
2 dried bay leaf, crumbled/pounded into bits
3 scallions ( green onions), chopped
4 beef bullion cubes (optional, its so nigerian to use knorr bullion in everything and i did)
salt to taste

2Add enough beef stock to just cover the oxtails and bring the mixture to a boil. Lower to a simmer, cover and cook 4 hours on very low heat, just leave it there and go do other things, i cooked a pan of beef stroganoff for my weekly lunch that i'll be sharing with you guys next week
3Open the can of beans, and rinse under running water like you should every single canned product.
4After four hours, add in the beans, tomato paste, ketchup, remaining two bullion cubes, leave uncovered for 30 minutes.
5For the last 30 minutes, increase heat to high, to reduce the liquid and give you a thicker consistency, at this point, the meat is falling apart, go ahead and taste one, i couldnt resist. Adjsust the salt, till this point we havent added any salt to it, so taste and season accordingly. Careful when stirring the pot to not break the meat into bits they are extremely delicate
