Main Ingredients

1 whole cauliflower head

1/4 cup olive oil

1/2 lemon, juiced

1/2 tbsp dried thyme

2 tsp dried onion powder (powder not onion salt)

1 tsp salt (preferably pink himalayan salt)

1 - 2 tsp fresh ground black pepper

1 medium-large clove garlic

Preparation

1Preheat oven at 400 degrees F and line a baking sheet with parchment paper.

2Trim all the leaves off the cauliflower. If the core is too long, trim some of the stem down but be sure to leave enough of the core so that the cauliflower remains whole.

3Ensure your hands are washed before rubbing down the cauliflower.

4Place the trimmed cauliflower on the parchment paper covered baking sheet. Pour 2 Tbsp of olive oil over the cauliflower and using your hand rub the olive oil all over the cauliflower. Set aside the other 2 Tbsp of olive oil will be used later.

5Once fully coated with a thin layer of olive oil add the dried thyme, dried onion powder (powder not onion salt), pink Himalayan salt, and fresh ground black pepper. Rub the spices in until the cauliflower is covered. Try your best to rub the spices into all the grooves of the cauliflower. Pour half of the lemon juice and set aside the other half for later. After pouring on some lemon juice make sure the spices still evenly cover the cauliflower.

6Place the baking sheet with the cauliflower on the middle rack in the oven and let cook for 20-30 mins until about half way cooked. Timing will change based on the size of the cauliflower.

7When the cauliflower is cooked half way through the top will start to brown and get fairly dry. At this time take the roasted cauliflower out of the oven and use the remaining olive oil and lemons juice as a baste over the cauliflower. It would be a good idea to add more spices at this time if you feel you need more.

8Place the cauliflower back in the oven for another 20-30+ minutes until tender and cooked all the way through.

9Let cool a bit and enjoy.
