Original Breakfast Burrito
A Jack-In-The-Box inspired vegan breakfast burrito.

2 russet potatoes
2 tbsp cooking oil
5 jalapeños en vinagre
1If you don't have the tofu scramble ready, start by compressing the block of firm/extra firm tofu for about 10 minutes. Tofu Scramble recipe is on HealthyHyna.com If you have it ready, start by chopping the russet potatoes into cubes.
2In a pan on low/medium heat add 2 Tbsp of cooking oil and let sit for about 3 minutes or until oil is hot, then add potato cubes and combine with oil. Cover the pan and put on low heat for 15-20 min. Stir occasionally.
3Start cutting vegan sausage (while they are still half frozen) into small pieces and add to potatoes.
4Start cutting the jalapeños en vinagre (take off seeds if desired) and add to potatoes and sausage, then add tofu scramble.
5Add mixture to a flour tortilla and enjoy!
