Orange-vanilla Panna Cotta

Main Ingredients

for panna cotta:

1 - 1/2 cup heavy cream

1 cup whole milk

1/2 cup low fat milk

1/2 cup sugar

1 - 1/2 packets unflavored gelatin (3 tsp)

1 tbsp vanilla

for orange-vanilla sauce:

1 cup orange juice

1/4 cup sugar

1 tbsp orange zest

1 tsp vanilla

1/4 cup heavy cream

Preparation

1Pour cream and milks into a heavy saucepan. Stir in gelatin. It will be lumpy at first, but dissolve as it heats.

2Heat over medium heat. Add sugar and vanilla when warm. Whisk to remove all lumps.

3Allow to sit on heat just until steam begins to rise. This takes about 10 minutes. Do not boil.

4Remove from heat and pour into molds or ramekins. Place in refrigerator to cool.

5For sauce:

6Add orange juice and sugar to small saucepan and heat.

7Add vanilla extract and allow to simmer until it begins to thicken, about 10-15 minutes.

8Remove from heat and stir in heavy cream. Allow to cool.
