Main Ingredients

1.5 cups almond flour

1/2 cup coconut flour

1/4 cup suncore foods orange carrot powder (if you do not have this, omit the milk below)

1/4 cup collagen peptides (optional)

1 tsp baking soda

1/2 cup coconut oil, melted

4 eggs

1/2 cup orange juice

2 tbsp milk of choice (i used almond, omit if not using orange carrot powder)

1 zest of orange (save a few tsp for the glaze if making)

1/2 cup dried cranberries

glaze (optional):

1.5 tbsp coconut oil, melted

1.5 tbsp orange juice

2 tsp granulated monk fruit or another sweetener

a few tsp orange zest saved from above


1Preheat oven to 350.

2Mix dry ingredients except cranberries and orange zest.

3Add in wet ingredients until batter is combined.

4Fold in cranberries and orange zest.

5Pour batter into a parchment lined bread pan.

6If making the glaze: Put the glaze ingredients in a small bowl and microwave or if you don't use a microwave use a double broiler method. The point is you don't want cold orange juice to make the coconut oil harden.

7Use a paint brush to paint the glaze on the top of the bread and bake for about 40 minutes. It is done when crust is golden and a toothpick comes out clean.
