Bacon Onion Jam
A rich, sweet spread with a hint of bacon for sandwiches or grilled meats

3 tbsp bacon fat
5 onions (red, or red and white; chopped thin in a food processor or by hand)
1 bottle red wine
2 tsp red vinegar
1/4 cup sugar
1 tbsp salt
1 tsp lemon juice
1 tbsp black pepper
1Cook the onions in bacon fat on very low heat for 2-3 hours, stirring occasionally. Meanwhile in a saucepan, reduce wine and vinegar down to about 1/2 cup. When onions are dry and soft, add wine mixture and cook until absorbed. Add sugar, salt and lemon juice. Cook more until jammy. Add pepper and adjust seasoning to your liking. Store in the fridge.
