One Skillet Breakfast With Sweet Potato Hash

Sautéed minced garlic and diced onions on the stove top over medium heat with avocado oil in the skillet. Pre-heat oven to 400 degrees. Ingredients

2 - 4 eggs 1 clove minced garlic

1 small white onions diced

1 - 2 sweet potato (1 sweet potato and 1white potato is an option)

1/1 cup sunrise soya foods sriracha smoked tofu cubed

1 medium red pepper(1/2 medium red pepper and 1/2 medium green pepper is an option)

1/2 - 1 cup chopped baby spinach

1/4 cup chopped parsley

1 tsp smoked paprika

1 tsp cumin

1 tsp cinnamon

1 - 2 tbsp pure maple syrup

Preparation

1Sautéed minced garlic and diced onions on the stove top over medium heat with avocado oil in the skillet.

2Pre-heat oven to 400 degrees. The whole skillet will be placed in the oven for the final step to slightly cook the top of the eggs.

3Cut the raw sweet and/0r white potatoes into cubes and add them to the skillet with the garlic and onions.

4Add the smoked paprika, cumin, cinnamon and pure maple syrup.

5Once the potatoes are cooked add the cubed Sriracha Smoked Tofu.

6Chopped the red and/or green pepper, spinach and parsley.

7Add the red pepper to the skillet and let cook.

8Once the potatoes and red peppers are tender add the chopped spinach and half of the parsley. Save some parsley for the presentation.

9Once the veggies are cooked and the spinach has wilted make a few holes in the centre of the skillet for the eggs. You can added anywhere between 2-4 eggs. for 2 eggs make 2 holes, for 3 eggs make 3 holes etc.

10Turn the stove top to low heat and crack the eggs into the holes in the middle of the sweet potato hash. The skillet will remain hot enough at low heat to cook the eggs without over cooking the veggies.

11Place the whole skillet in the oven and cooked for about a few more minutes until the eggs reach the desired doneness.
