One-pot Garlic Avocado Pasta

Main Ingredients

16 oz pasta

2 avocados

4 Cloves of garlic, minced

1/2 lemon

2 tsp salt

1 tsp pepper

1/4 cup parmesan cheese, to taste

Preparation

1In a large pot, bring water to boil and add 1 tsp salt.

2Add pasta, and cook to al dente instructions.

3Drain pasta, reserving about 1/4 cup of pasta water in the pot.

4Return pot to burner, adjust heat to low. Add minced garlic and lemon juice. Squeeze avocados into the pot.

5Stir to combine, mashing the avocados to desired consistency.

6Season with salt and pepper.

7Serve immediately, topped with parmesan cheese.
