Main Ingredients

4 cups kale leaves, chopped, ribs and thick stems removed

2 cups cherry/grape tomatoes

2 tablespoon extra virgin olive oil

4 ounces ( pieces) salmon fillets

2 tablespoons parsley, chopped

3 tablespoons yellow mustard

1 tablespoon whole grain mustard

1 tablespoon whole grain mustard

1 tablespoon pure maple syrup

1 tablespoon tamari or reduced sodium soy sauce


1Preheat oven to 400 degrees F.

2Lightly oil a baking sheet.

3In a small bowl, whisk together mustards, honey and tamari; set aside.

4Place kale and tomatoes in a single layer onto the prepared baking sheet.

5Drizzle with olive oil and season with salt and pepper, to taste.

6Top with salmon in a single layer and brush each salmon filet with mustard glaze.

7Place into oven to bake. After baking for 10 minutes remove from oven and brush the fish 2-3 times with mustard mixture and bake another 6-8 minutes until the fish flakes easily with a fork.

8Serve immediately, garnished with parsley, if desired.

Additional Notes

Cooking time may vary slightly depending on the thickness of the fillets.
