One Pan Cheesy Bacon Hash

4 slices bacon, diced
1/2 small yellow onion, diced
1/2 red pepper, diced
1/2 teaspoon paprika
1 teaspoon garlic salt
pinch ground pepper
1 tablespoon butter
1 1/2 cups simply potatoes brand diced potatoes
1/2 cup sharp cheddar cheese, grated
1 green onion, sliced thinly
1 teaspoon fresh parsley, chopped
1 avocado, diced
1Preheat oven to 375 degrees.
2In an 8 inch cast iron skillet (or other ovenproof pan), cook four slices of diced bacon until crisp. Add the diced onion and pepper and cook, stirring frequently, until softened (about 5 minutes).
3Add the paprika, garlic salt and pepper and stir well. Add the butter and the potatoes and stir until the butter is melted and evenly distributed.
4Allow the potatoes to cook on medium heat for about 10 minutes, stirring frequently.
5Sprinkle the grated cheese over the potatoes and crack the eggs into the pan. Allow to cook until the whites just begin to set (the edges go from transparent to opaque).
6Transfer to the oven and bake for 1o minutes, or until the eggs are cooked to your liking.
7Top with green onion, parsley and avocado and serve.
