Old Fashion Apple Compote - Instant Pot

Cooked apples remind me of my grandmother! She always had "fried" apples when I visited her. This recipe tastes almost as good as her apples (no one can replace my grandmother's fried apples!) with much less effort! We love to eat this alone as applesauce or over plain greek yogurt, waffles, pancakes, ice cream.... YUMMY!

Main Ingredients

6 medium or 4 large organic apples, cored and chopped*

2 - 3 drops of dōterra lemon essential oil

1 - 2 tablespoons brown sugar or to taste

1 - 2 tablespoons turbinado sugar or to taste**

2 teaspoons pure vanilla extract

2 tablespoons butter

1 .5 teaspoons ground cinnamon or to taste

2 - 3 drops dōterra on guard essential oil blend***

Preparation

1Fill a medium glass or stainless steel mixing bowl with filtered water and 2-3 drops of lemon essential oil.

2As you are chopping the apples, place cut apples into bowl, to prevent them from turning brown. (apples oxidize very quickly when cut and exposed to the air)

3After all apples are cut, drain water and place the apples in your Instant Pot.

4Sprinkle with the sugars (amount depends on how sweet you like your apples. If you are using these to top plain, unsweetened yogurt you may want the full amount of sugar, but if you want to eat as applesauce, less sugar is better).

5Add the rest of the ingredients except On Guard oil to the Instant Pot.

6Lock on lid and close pressure valve.

7Set Instant Pot to cook at High pressure for 1 minute (it takes time to raise to pressure but cooks for only 1 minute)

8When Beep sounds, allow a 10-15 minute Natural Pressure Release (NPR).

9Once the lid is opened, stir in 2-3 drops of On Guard essential oil blend.

Additional Notes

  • I leave the peeling on mine, but you can peel them if you prefer. Apples that work great for this are any good cooking apple - examples: Granny Smith, Gala, Jonathan, Honeycrisp, Golden Delicious, etc. Use one variety or mix it up.

**I prefer turbinado sugar because it is created in such a natural manner, with almost no processing, that it is often referred to as “sugar in the raw” or “raw sugar.”

***On Guard essential oil blend contains Wild Orange Peel, Clove Bud, Cinnamon Bark/Leaf, Eucalyptus Leaf, and Rosemary Leaf/Flower essential oils and is FDA approved as a supplement for internal use which makes it safe to add to food. NOTE: This compote may seem really runny - don't drain off the liquid as it will thicken in the refrigerator.
