Main Ingredients

8 oz large king oyster mushrooms, sliced on a mandolin into 1/8 inch thick long slices

2 tablespoons tamari

1 tablespoon balsamic vinegar

1 tablespoon maple syrup

1/2 teaspoon liquid smoke, or smoked paprika

Preparation

1In a small bowl, mix together the marinade.

2Place sliced mushrooms in a large bowl and pour the marinade over them, then gently toss them until they're fully coated. Allow to marinate for 10-15 minutes.

3Heat a nonstick skillet and heat over medium high heat until warm.

4Cook mushrooms in batches. Spread them across the skillet without overlapping them and save the marinating liquid for later in the process.

5Let mushrooms cook without moving them them for about a minute. When the skillet gets hot, turn it down to medium heat or medium low heat if it starts to smoke. When the bottom side of the mushrooms turns golden, flip them all over with or tongs to cook the other side. Keep flipping ever minute or two until both sides turn golden brown and very lightly charred. The process will take anywhere from 5 to 8 minutes. Transfer the mushrooms to a plate and set aside.

6Add the rest of the mushrooms to the skillet. The cooking process will be shorter this time, since the skillet is already hot. Adjust heat between low and medium low to cook the mushrooms slowly, with the skillet remaining hot. Again, cook the mushrooms in the dry pan and flip them over until golden brown and lightly charred. This may only take 3-5 minutes for this batch.

7When the last batch of mushrooms is cooked, add the previous batch back into the skillet. Then pour over the marinade and cook for another 3 minutes or so until all of the liquid is absorbed.

8Remove all the mushrooms from the pan and use right away or place in a sealed container in the fridge and reheat to enjoy. These mushrooms are a great bacon substitute in sandwiches, wraps, pasta, or anywhere else you would enjoy vegan bacon.

Additional Notes

If you can't find king oyster mushrooms, thinly sliced portobello mushrooms will also work well. They tend to cook slightly faster, especially when sliced very thin.
