Oatmeal Energy Balls

2 Ripe bananas, mashed
1/4 cup honey or agave
1/2 cup almond butter
2 1/2 cups rolled oats (not the instant kind)
1/2 - 1 tsp cinnamon to taste
handful chocolate chips, to taste
any other add ins you like such as dried fruits or chopped nuts or superfoods (i.e cacao nibs instead of chocolate chips)
1In a large bowl, mash the two bananas with a fork. They don't have to be completely lump-free but it should look smooth
2Add to the bananas all your other ingredients and mix well. You can either use a spatula or your hands if you want to up the fun level of this recipe.
3Once everything is well incorporated, use your hands to scoop up small balls and roll the mixture between your palms. It will be sticky, you can just use your fingertips if it's too hard to roll the mixture.
4Lay the balls on a sheet (preferably lined with parchment/wax paper but this is not necessary). The bites can be touching each other, they just need to be in a flat layer.
5Refrigerate the bites overnight. Once refrigerated, transfer to an airtight container for lasting storage (about a week).
6Enjoy having a filling and energy filled breakfast without having to wake up any earlier!
