Oatmeal Chocolate Chip Muffins

Main Ingredients

1 cup rolled oats

1 cup milk

1 cup all purpose flour

1/3 cup brown sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/3 cup vegetable oil

1 beaten egg

1/2 cup chocolate chips

Preparation

1In a small mixing bowl, soak the oats in the milk and then follow the rest of the steps.

2Preheat the oven to 425 degrees F. and prepare muffin pan with paper liners. Spray the liners with cooking spray.

3In a larger mixing bowl, combine the flour, baking powder, sugar and salt and mix together.

4In a large measuring cup, beat together the egg and oil and add them to the oatmeal and milk and blend together.

5Pour the oatmeal mixture into the dry mixture and stir together until everything is completely moistened.

6Mix in the chocolate chips.

7Fill the baking cups with the batter about 2/3 of the way full.

8Bake at 425 degrees F. for 20 min.

9Enjoy!

I love one of these muffins with fruit and juice! A perfect breakfast!
