Oat & Seed Crackers
You'll never want to buy those fancy (read: Expensive) gourmet crackers again! These are easy and delicious, and knowing exactly what's in them means that when I want to eat the whole plate of them, I will - without feeling an ounce of guilt.

1 c. old-fashioned oats
3/4 c. raw pumpkin seeds (pepitas)
1/3 c. raw sunflower seeds
1/3 c. sesame seeds
2 tbsps chia seeds
1 tbsp flax seeds
3 tbsps poppy seeds
1 tsp kosher salt
1 tbsp plus 1 tsp vegetable oil
1 tbsp pure maple syrup
1Preheat oven to 375°.
2Mix oats, pumpkin seeds, sunflower seeds, sesame seeds, chia seeds, flax seeds, poppy seeds, and salt in a large bowl.
3Stir oil, maple syrup, and 3/4 cup room-temperature water in a medium bowl to combine.
4Pour liquid over oat mixture and toss until mixture is completely soaked. Let sit 10 minutes; mixture will absorb water and thicken.
5Form oat mixture into a ball and transfer to a parchment-lined baking sheet.
6Press a second sheet of parchment paper directly on top and, using a rolling pin, flatten to 1/8" thick (the shape doesn’t matter).
7Remove top layer of parchment.
8Bake cracker until golden brown around edges, 15–20 minutes.
9Remove from oven and turn over, placing a fresh piece of parchment under the cracker before replacing onto the baking sheet.
10Bake until firm and golden brown around edges, 15–20 minutes.
11Let cool on baking sheet, then break into desirably sized pieces.
You can add in any number of varieties of seeds you like, so long as the total quantity of ingredients remains the same.
