O'neil Family Cupcake Recipe
A family favourite and a tried and tested recipe, The O'Neil Family Cupcake Recipe is a never fail cupcake that is perfect for every occasion.

[ for the cupcakes ]
250 g butter, softened
2 cups (400g) caster sugar
2 teaspoon vanilla bean paste
4 large eggs
3 cups (450g) plain flour
2 teaspoons baking powder
1 cup (250g) milk
[ for the frosting ]
1 cup (250g) unsalted butter, softened
3 cups pure icing sugar
1 teaspoon milk
1 teaspoon vanilla extract
1/8 teaspoon salt
1[To Make the Cupcakes] Preheat your oven to 180C/355F.
2Line twenty-four 1/3-cup (80ml) capacity muffin pans with paper cases or grease with butter, oil or oil spray.
3Use an electric mixer to beat your butter, sugar and vanilla bean paste until pale and creamy. Add the eggs, one at time, beating well between each addition.
4Sift your flour and baking powder and add in alternate batches with your milk, stirring with a wooden spoon until just combined.
5Spoon mixture evenly among the lined pans and smooth the surface. Bake your cupcakes for 15-20 minutes or until cooked through and a skewer or toothpick inserted into the middle removes clean.
6Remove your cupcakes from the oven and transfer to a wire rack to cool completely.
7[To Make the Frosting] Combine butter, sifted icing sugar and salt in a bowl. Beat with electric beaters or in your stand mixer until blended.
8Add the milk and vanilla, beating for an additional 3 to 5 minutes or until smooth and creamy. If you'd like coloured frosting, add liquid food colouring as needed and mix until combined.
9Transfer your frosting to a piping bag and ice your cupcakes as desired.
