Nutty Cacao Slices (gluten, Dairy And Grain Free, Paleo)

As its coming up to Christmas I am playing around with chocolatey gluten and dairy free recipes for my friends and family to enjoy over the holiday season. I normally tie a wrapped up sweet treat on to all of the presents that I give away, and these will be just prefect! I will have to be very careful when I make them though, they are SO moreish I will end up eating them all!

Main Ingredients

1 cup cashews

1 cup macadamias

1 cup pistachio’s

1/3 cup dessicated coconut

4 tbsp melted coconut oil

5 . tbsp raw honey

1 tbsp cacao

Preparation

1Line the base of a 20cm springform cake tin with baking paper.

2Add the cashews, macadamias and 3/4 cup of pistachios to a food processor and blend chopped (but not paste-like).

3Add the coconut, coconut oil, raw honey and cacao and blend again blend until the mixture begins to stick together. This should take a couple of minutes and you may need to scrape the sides occasionally.

4Add the remaining 1/4 of the pistachios to the mixture, do not blend.

5Spread the mixture evenly in the baking paper lined tin and press down firmly.

6Place in the freezer until set, roughly two hour’s.
