Nuts Fruits And Flakes Wfpb Cookies
I love cookies! I also try to avoid processed sugar, oil and gluten. As a whole-food, plant-based person I like my desserts to be nutritious while tasting delicious. These cookies accomplish both goals. They can be eaten as a dessert, breakfast, or healthy snack. Enjoy!
Prep Time: 10:00
Cook Time: 20:00
3 ripe bananas, mashed
1/2 cup organic peanut or other nut butter
2 cups oats
1 teaspoon vanilla (optional)
1 cup organic raisins
1/2 cup vegan mini chocolate chips (i like enjoy life brand)
1/2 cup raw pumpkin seeds
1 teaspoon pumpkin pie spice
1Preheat oven to 400 degrees.
2Place parchment paper on a cookie sheet.
3Mix all ingredients and drop by spoonful onto cookie sheet.
4Bake for 20 minutes or until cookies brown a bit.
5Remove from oven and place on a cooling sheet for 5 minutes.
You can really add other things like raw unsweetened coconut, organic dried raisins, raw sunflower seeds, chia seeds, etc. Have fun making your own yummy creations. Make sure all of your items have no added sugar. After a couple of days you will want to store in the refrigerator since they are pretty moist.
