Nut & Seed Muesli Bars

1/2 cup coconut oil
1/2 cup maple syrup (or rice malt syrup)
1/4 cup cacao powder
1 teaspoon cinnamon
1 1/2 cups mixed seeds and nuts (whatever you like)
1 1/4 cup oats or quinoa flakes
1/4 cup goji berries
2 tbsps chia seeds
1 cup desiccated coconut
1Preheat oven to 180°C.
2In a medium saucepan over medium stir together coconut oil, maple syrup, cacao powder and cinnamon until melted.
3In a bowl, mix together all of the dry ingredients and spread out on a tray lined with baking paper. Toast in the oven for 5 minutes. Allow to cool slightly and pulse a few times in a food processor ensuring the mix is still chunky.
4Add to a bowl and mix in wet ingredients stirring until well combined.
5Place mixture in a silicone bar mould tray or simply place in a lined brownie sized tin and press down firmly. Place in freezer to set for 10 minutes.
