No Bake Oatmeal Blueberry Bars

A delicious refined sugar free breakfast or dessert bar for all those beautiful blueberries that need using up! Love that this recipe requires no baking and can even be done without the stove! Can't make it much easier than that!!

Main Ingredients

the bar:

2 cups old fashioned rolled oats, gluten free

1 cup roasted almonds

4 dried dates, pitted

1/4 cup honey

1/4 cup coconut oil, melted

pinch of sea salt

the jam:

2 cups blueberries

1/4 cup honey

1 tsp cinnamon

1/2 tsp nutmeg

5 grams (1 tsp) grass-fed gelatin

Preparation

1For the Bar

2In a food processor, blend the oats and almonds until they form an even consistency. Add the dates, honey, melted coconut oil, and a pinch of sea salt.

3Blend until the mixture stays together when pinched between two fingers.

4Remove the mixture from the food processor, press all but 3/4 cup of the mixture into an 8x8” pan, pressing the mixture down firmly into a flat layer. Set aside.

5For the Jam

6In the same food processor (washed out or wiped down), blend blueberries until they are almost smooth.

7Transfer to a microwave safe bowl (or small sauce pot), add your honey, cinnamon, and nutmeg to the blueberries and stir to combine.

8Microwave or place over medium high heat, bring to a light boil stirring occasionally (3-5 minutes).

9Remove from heat; stir the blueberry mixture as you sprinkle in the gelatin. Let cool at room temperature stirring occasionally for 10 minutes.

10Once blueberry mixture has cooled down and is beginning to thicken, pour the jam on top of the bar base, spreading evenly. Sprinkle the remaining oatmeal mixture over the top.

11Place in the refrigerator for at least 2 hours. Enjoy!!
