No-bake Coconut Peanut Butter Protein Bars

These bars are packed with wholesome foods that provided lasting energy and are so fudgy with a cookie-dough texture. They are a staple in my fridge and can be found just about any time. Great for post-workout snacks, or a healthier dessert option, they don't last long!

Main Ingredients

1/2 cup natural, unsalted peanut butter

1/4 cup coconut oil, virgin & unrefined

1/4 cup raw organic honey

1 tsp vanilla extract

1/4 cup egg white protein powder

1 cup rolled oats, gluten free (trader joe's brand is my favorite)

1/2 cup shredded coconut, unsweetened

1 tbsp chia seeds

1/2 cup dark chocolate chips


1In a medium saucepan over medium-low heat, melt the peanut butter, coconut oil, honey and vanilla. Stir occasionally until combined.

2In a food processor or blender, pulse the rolled oats and shredded coconut together until it resembles flour, but still as a slight texture from the oats and coconut.

3In a large mixing bowl, combine the peanut butter mixture with oat mixture. Let cool about 5-10 minutes. You can stick in the fridge to speed up this process as well.

4Stir in the chia seeds and chocolate chips.

5In a 8x8 pan, lay parchment paper on bottom Spread mixture evenly with a spatula. Let cool completely, about 1-2 hours. Cut into 16 square bars.

6Store in the fridge in airtight container for up to 2 weeks.
