Main Ingredients

1/4 cup coconut oil

1/4 cup pure maple syrup

1/3 cup unsweetened cocoa powder

1/2 cup 100% almond butter (or nut/seed butter of your choice)

1/2 cup cooked quinoa (1/4 cup uncooked)

1/2 cup rolled oats

1/4 cup wheat bran (optional)

1/4 cup water

1/2 cup unsweetened shredded coconut

coarse sea salt for sprinkling


1Line baking sheet with parchment paper and set aside.

2In a small saucepan over medium, melt together coconut oil, maple syrup and cocoa powder. Whisk until combined. Add the almond butter and stir again until smooth.

3Remove saucepan from the heat and fold in the quinoa, rolled oats, wheat bran (if using), water and shredded coconut (or coconut flakes).

4Using a cookie scoop or spoon, drop the mixture onto the prepared baking sheet, shaping slightly or rolling into balls with your hands if desired.

5Sprinkle each ball with a few grains of sea salt (if using) and place in the freezer to set for about 30 minutes.

Additional Notes

Store in an airtight container in fridge or freezer. They will last longer in freezer but won't be as hard if stored in fridge.
