No. 08 Sally's Rosemary Shortbread
This is a recipe from The Forest Feast by Erin Gleeson that Sally has been making regularly. Sally does the mixing by hand. It is simple, delicious, and perfect to share. Enjoy!

1/3 cup sugar
1 cup all-purpose flour
2 teaspoons fresh rosemary, chopped
1/2 cup (1 stick) salted butter, cold and cut into chunks
1Preheat oven to 325.
2Pulse all ingredients in a food processor very briefly, then press the crumbly mixture into a 9-inch pie pan.
3Bake at 325 for 30 minutes. Cool 5 minutes before cutting.
Sally mixes her shortbread by hand, using a spoon. If you don't have a food processor, you could use a pastry blender or two knives to cut the butter. You could try making this with other herbs as well. Enjoy!
