New Year's Bean Bowl With Fried Plantains

Main Ingredients

1 1/2 cups steamed cabbage

15 ounce can black beans, rinsed and drained

1 small onion, cut into half moon shapes

2 small carrots, cut into coins

1 orange bell pepper, roughly chopped

3/4 cup fried plantains

1 cup salsa

sea salt, to taste

ground black pepper, to taste

1 1/2 cups coconut oil

Preparation

1In a large skillet, preheat coconut oil over medium heat.

2Rinse and drain black beans. Add beans, cabbage, salt and pepper to skillet. Stir to combine. Cook 3-5 minutes, stirring occasionally.

3Gather, rinse veggies (bell pepper, onion, carrots), and roughly chop them. Add to skillet and stir to combine. Cook 3-5 minutes, stirring occasionally.

4After about 7-9 minutes, pour in salsa and plantains. Stir and allow flavors to meld, another 5 minutes or so.

5To serve, spoon up half the skillet and sprinkle with hemp seeds or nutritional yeast to serve.
